I hide vegetables. In meals, in cakes, in muffins.
It’s not what you think, though. I don’t do it for my kids. At least, I don’t anymore, it did all start because Ellie was told by another child at day care that veggies would cut up her insides. That caused quite some problems for a time but now they are all pretty awesome veggie eaters – Jasper in particular.
No, I don’t hide vegetables for my children. I hide them for myself.
I know how crazy that sounds. I’ve always been a picky eater and have spent my life struggling to eat so many things. I’m a million times better than I once was but I still have difficulties. There are certain things I can’t eat if I ‘know’ they’re in a meal. Zucchini and mushrooms are the biggest problems – I love the taste they add to my food but I can’t deal with eating them if they look like zucchini and mushroom. I will pick them out – even if I, myself chose to put them in there.
So, I hide them.
The quickest and easiest way to create indiscernible veggies to put in your cooking is to whiz them up in Connie.
Simply put your chosen vegetable, quartered, in the bowl fitted with the Ultrablade and set. I like to mix at speed 12 for 20-30 seconds. You can play with the speed/time a bit if you don’t quite want it that cut up.
Once you’ve done that, place in another bowl and start to prepare your meal!
And Voilà! Vegetables even the pickiest eater won’t pick up on!
